Who doesn't love a good pancake? You may've heard of thin French style crepes or thick American pancakes, but have you tried Japanese fluffy pancakes? Japanese fluffy pancakes, often called soufflé pancakes, can be served for breakfast or as a dessert.
Of course, we had to put our Ueshima twist on things by serving them with a homemade coffee syrup!
Impress your friends with these fluffy Japanese-inspired pancakes, drizzled with a delicious homemade coffee syrup.

Ingredients:
- 150g self raising flour
- ½ tsp baking powder
- 2 tbsp golden caster sugar
- 2 eggs
- 1 tbsp vegetable oil
- 180ml milk
- 1/4 tsp Vanilla extract
For the coffee syrup:
- 100ml brewed coffee made with 2 tablespoons (30g) of your favourite Ueshima blend
- 100g caster sugar

Japanese Pancakes Recipe:
- Sift the flour and baking powder into a bowl and add the sugar.
- Make a well in the centre and add the eggs and oil and combine.
- Gradually whisk in the milk and vanilla extract until smooth.
- Heat a non-stick frying pan over a low heat with a drizzle of vegetable oil and put two oiled crumpet rings lined with grease proof paper into the pan. Fill the rings with batter (No more than three quarters high!) Put a lid on the pan and cook the pancakes on the lowest heat for around 10 minutes. When they are ready to flip, they should look bubbly on top.
- Carefully turn them over. Cook for another few minutes until golden.
Coffee Syrup Method:
- Add your brewed coffee to a small saucepan with the sugar.
- Heat on a medium heat until it's thickened.
Now simply stack your fluffy pancakes, finish with a dusting of icing sugar and a drizzle of coffee syrup. Serve with a cup of your favourite Ueshima coffee.
